Ingredients

1 lb smoked sausage, sliced

1 medium head green cabbage, shredded

1 medium yellow onion, chopped

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

2 tablespoons olive oil or butter

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1/4 teaspoon crushed red pepper flakes (optional)

2 green onions, chopped (for garnish)


Instructions

1. Slice the sausage into thick coins, shred the cabbage, chop the onions and bell peppers, and mince the garlic.

2. Heat oil in a large skillet over medium-high heat. Add the sausage slices and sauté until browned, about 4–5 minutes. Remove and set aside.

3. In the same skillet, add more oil if needed, then sauté the onion and bell peppers for about 4 minutes until soft. Add the garlic and cook for 1 more minute.

4. Add the cabbage and stir to combine. Cook for 6–8 minutes until wilted and slightly browned.

5. Return the sausage to the pan and stir well. Season with salt, pepper, paprika, and red pepper flakes if using. Cook for another 3–4 minutes.

6. Remove from heat and top with chopped green onions. Serve hot.


Notes

Use a wide skillet to give your ingredients room to caramelize, not steam.

Let the sausage brown undisturbed for a few minutes to deepen its flavor.

Adjust the seasoning only after adding the sausage back in — some types can be quite salty.
