1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 cup packed dark brown sugar

1/2 cup unsulfured molasses

1/3 cup unsalted butter, melted

1 large egg, room temperature

1/2 cup buttermilk

1/2 cup chopped raisins or dates (optional)


Instructions

1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line with paper liners.

2. In a large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, cloves, nutmeg, and allspice.

3. In a separate bowl, whisk together brown sugar, molasses, melted butter, egg, and buttermilk.

4. Gently combine the wet and dry ingredients with a spatula until just mixed.

5. Fold in raisins or dates, if using.

6. Spoon the batter into prepared muffin tins, filling each about 3/4 full.

7. Bake for 18–22 minutes, until tops are glossy and a toothpick comes out clean.

8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
