  • 4 medium golden or red potatoes, washed and cut into bite-sized chunks
  • 1 lb (450g) smoked halal sausage, sliced into ½-inch rounds
  • 1 large yellow onion, cut into wedges
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme (or rosemary)
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Place the chopped potatoes, sausage slices, and onion wedges in a large mixing bowl.
  3. Drizzle with olive oil, then sprinkle garlic powder, smoked paprika, thyme, salt, and pepper over the mixture. Toss until evenly coated.
  4. Spread the mixture in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 30–35 minutes, stirring halfway through, until the potatoes are tender and golden and the sausage is slightly crisp.
  6. Remove from the oven and garnish with fresh parsley if desired. Serve warm.
