Ingredients

Scale

2 cups mixed nuts (almonds, cashews, pecans, peanuts)

2 tablespoons olive oil or melted butter

3 tablespoons brown sugar

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

1 tablespoon fresh rosemary or thyme (optional)

Instructions

1. Preheat your oven to 325°F (160°C).

2. In a large bowl, combine all the mixed nuts.

3. In another bowl, whisk together olive oil or butter, brown sugar, maple syrup, vanilla, salt, and spices.

4. Pour the mixture over the nuts and toss until evenly coated.

5. Spread the nuts in a single layer on a parchment-lined baking sheet.

6. Roast for 20–25 minutes, stirring halfway through.

7. Watch carefully during the last few minutes to avoid burning.

8. Remove from oven and let cool completely on the baking sheet.

9. Sprinkle herbs or extra salt if desired and mix gently.

10. Serve immediately or store for later.

Notes

Use raw nuts for best flavor and control over salt levels.

Do not skip stirring during roasting to prevent uneven cooking.

Allow nuts to cool fully to achieve maximum crunch.
