Ingredients
4 slices sourdough or multigrain bread
1 large apple, thinly sliced
4 oz brie cheese, sliced
2 tsp olive oil (for roasting apples)
1 tbsp butter or olive oil (for grilling)
1 tsp honey or fig jam (optional)
2 tbsp chopped pecans or walnuts (optional)
1/4 tsp ground cinnamon or nutmeg (optional)
Instructions
1. Preheat oven to 400°F (200°C). Place apple slices on a baking sheet, drizzle with olive oil, and sprinkle with cinnamon or nutmeg. Roast for 15 minutes.
2. Spread butter or oil on the outside of each bread slice.
3. Layer brie slices, roasted apples, honey or jam, and nuts (if using) between two bread slices, buttered side out.
4. Grill the sandwich in a panini press or skillet over medium heat for 3–4 minutes per side, until golden and cheese is melted.
5. Let rest for a minute, then slice and serve warm.
Notes
Let the brie sit at room temperature to help it melt faster when grilled.
Don’t overload the sandwich to prevent it from falling apart during grilling.
A sturdy bread like sourdough will crisp up nicely and hold the filling well.
