  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • ¼ cup water
  • 1 teaspoon lemon juice

For the Whipped Cream Frosting

  • 2 cups heavy whipping cream, chilled
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For Garnish (Optional but Recommended)

  • Fresh strawberries, halved
  • Additional whipped cream for piping
  • Extra strawberry sauce for drizzling

Instructions

Step 1: Prepare the Cheesecake Layer

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Beat cream cheese and sugar until smooth.
  3. Add eggs, one at a time, mixing just until combined. Stir in vanilla extract and sour cream until smooth.
  4. Pour the batter into the prepared pan.
  5. Wrap the pan with foil and place in a larger baking dish. Fill with hot water halfway up the sides.
  6. Bake for 40-45 minutes, then cool in the oven for 30 minutes before refrigerating for at least 4 hours.

Step 2: Make the Red Velvet Cake Layers

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. Whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, mix vegetable oil, buttermilk, eggs, vanilla extract, vinegar, and red food coloring.

Step 3: Prepare the Strawberry Sauce

  1. In a saucepan, combine strawberries, sugar, cornstarch, water, and lemon juice.

Step 4: Make the Whipped Cream Frosting

  1. Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Step 5: Assemble the Cake

  1. Place one red velvet cake layer on a serving plate. Spread a thin layer of whipped cream frosting.
  2. Carefully place the chilled cheesecake layer on top.
  3. Spread another thin layer of frosting.
  4. Place the second red velvet cake layer on top.
