Description

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon paprika

1 teaspoon Italian seasoning

1 large red bell pepper, chopped

2 jalapeños, seeded and chopped

4 cloves garlic, minced

1/2 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

8 oz fettuccine pasta

Fresh parsley for garnish (optional)


Instructions

1. Season the chicken breasts with salt, pepper, paprika, and Italian seasoning.

2. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes per side, until golden brown and cooked through (165°F internal temperature). Remove and set aside to rest.

3. In the same skillet, add the chopped red bell pepper and jalapeños. Sauté for 3-4 minutes until the peppers begin to soften.

4. Add the minced garlic and sauté for another 30 seconds until fragrant.

5. Pour in the chicken broth and bring it to a simmer. Let it cook for 1 minute, then add the heavy cream and grated Parmesan cheese. Stir until the cheese melts and the sauce thickens, about 3-4 minutes.

6. Cook the fettuccine pasta according to the package instructions. Drain and reserve about 1/2 cup of pasta water.

7. Add the cooked pasta to the skillet with the sauce. Stir to coat the pasta evenly. Add a little pasta water if the sauce is too thick.

8. Slice the cooked chicken into strips and add it to the pasta. Stir to combine.

9. Serve hot, topped with fresh parsley and extra Parmesan cheese if desired.
