Ingredients
2 tablespoons chia seeds
1/2 cup fresh raspberries
1 whole lemon, juiced
4 cups filtered cold water
1–2 teaspoons honey or maple syrup (optional)
Instructions
1. Add 2 tablespoons of chia seeds into a large mason jar or pitcher and pour in 1 cup of filtered water. Stir well and let sit for 10–15 minutes, stirring occasionally until they form a gel-like texture.
2. Add 1/2 cup fresh raspberries. Lightly mash some with the back of a spoon if you want stronger flavor.
3. Squeeze the juice of 1 whole lemon into the jar. Mix everything thoroughly.
4. Pour in the remaining 3 cups of cold filtered water and stir again.
5. Let the mixture sit in the fridge for at least 30 minutes to chill and allow flavors to infuse.
6. Taste and optionally add 1–2 teaspoons of honey or maple syrup. Stir well.
7. Shake or stir before serving. Pour into a glass and garnish with lemon slices or a few raspberries if desired.
Notes
Stir chia seeds during the initial soak to avoid clumping.
Use fresh lemon juice for the best flavor—bottled versions can taste flat.
Store in an airtight jar for up to 4 days in the fridge for maximum freshness.
