Ingredients
1 lb flank or sirloin steak, thinly sliced
2 cups broccoli florets
1 cup carrots, sliced into strips
1/2 cup green onions, cut into 1–2 inch pieces
3 cloves garlic, minced
1 teaspoon fresh ginger, minced
3 tablespoons soy sauce (divided)
2 tablespoons oyster sauce
1 teaspoon cornstarch (for sauce)
1 teaspoon cornstarch (for beef)
1/2 cup water or beef broth
1 teaspoon sesame oil (divided)
2 tablespoons vegetable oil
Instructions
1. Slice the beef thinly against the grain. Prepare all vegetables and aromatics.
2. Marinate beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a drizzle of sesame oil for 10–15 minutes.
3. Whisk together 2 tablespoons soy sauce, 2 tablespoons oyster sauce, 1/2 cup water or broth, 1 teaspoon cornstarch, and a splash of sesame oil to make the sauce.
4. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Sear beef for 1–2 minutes per side until browned. Remove and set aside.
5. In the same pan, add more oil if needed. Stir fry garlic and ginger for 30 seconds, then add carrots and broccoli. Cook for 2–3 minutes until tender-crisp.
6. Return beef to the pan, pour in the sauce, and toss to coat. Simmer for 2–3 minutes until sauce thickens.
7. Add green onions, stir well, and serve hot over rice or noodles.
