1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon paprika

8 corn tortillas

1 avocado, diced

1/4 cup diced red onion

1/4 cup chopped fresh cilantro

2 lime wedges

1/2 cup pico de gallo or diced tomatoes


Instructions

1. Mix chili powder, cumin, garlic powder, paprika, salt, and pepper in a bowl. Rub all over chicken and let rest for 5–10 minutes.

2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 4–6 minutes per side until cooked through. Internal temp should reach 165°F (75°C).

3. Remove chicken and let it rest for 5 minutes before slicing.

4. Dice avocado, chop onion and cilantro, slice limes, and prepare pico de gallo.

5. Warm tortillas in a dry skillet or over open flame for 20–30 seconds per side.
