- 1 lb (450g) shrimp, peeled and deveined
- 4 cups (1 liter) chicken or seafood broth
- 1 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 2–3 Thai red chilies or 1 tsp red pepper flakes
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- Juice of 1 lime
- ½ tsp sugar
- ½ cup green peas or chopped green beans
- ¼ cup scallions, chopped
- ¼ cup cilantro, chopped
- Optional: sliced mushrooms, cherry tomatoes, bok choy
Instructions
- Prep shrimp, chop garlic, onion, chilies, and any vegetables or herbs.
- Heat oil in a large pot over medium heat. Sauté onions until soft, then add garlic and chilies.
- Pour in broth. Add fish sauce, soy sauce, and sugar. Simmer for 5–7 minutes.
- Add vegetables and cook 2–3 minutes until just tender.
- Add shrimp and cook 2–3 minutes, until pink and opaque.
- Turn off heat, stir in lime juice.
- Taste and adjust seasoning.
- Serve hot with fresh cilantro and scallions on top.
