  • 1 lb (450g) shrimp, peeled and deveined
  • 4 cups (1 liter) chicken or seafood broth
  • 1 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 23 Thai red chilies or 1 tsp red pepper flakes
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • Juice of 1 lime
  • ½ tsp sugar
  • ½ cup green peas or chopped green beans
  • ¼ cup scallions, chopped
  • ¼ cup cilantro, chopped
  • Optional: sliced mushrooms, cherry tomatoes, bok choy

Instructions

  1. Prep shrimp, chop garlic, onion, chilies, and any vegetables or herbs.
  2. Heat oil in a large pot over medium heat. Sauté onions until soft, then add garlic and chilies.
  3. Pour in broth. Add fish sauce, soy sauce, and sugar. Simmer for 5–7 minutes.
  4. Add vegetables and cook 2–3 minutes until just tender.
  5. Add shrimp and cook 2–3 minutes, until pink and opaque.
  6. Turn off heat, stir in lime juice.
  7. Taste and adjust seasoning.
  8. Serve hot with fresh cilantro and scallions on top.
