1 lb chicken breast or thighs, diced

1 tbsp olive oil

1 packet fajita seasoning (about 2 tbsp)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 large onion, sliced

1 cup queso dip

1 1/2 cups shredded cheddar or Mexican blend cheese

2 cups cooked rice (optional)

1/4 tsp salt

1/4 tsp black pepper

1 jalapeño, sliced (optional for garnish)


Instructions

1. Preheat oven to 375°F (190°C).

2. Dice chicken and season with half the fajita seasoning.

3. In a skillet, heat olive oil and cook the chicken until browned and fully cooked. Remove and set aside.

4. In the same skillet, add peppers and onions. Sauté with the remaining fajita seasoning until soft and slightly caramelized (6–8 minutes).

5. In a mixing bowl, combine the chicken, sautéed vegetables, and cooked rice if using. Mix well.

6. Spread mixture evenly in a greased 9×13-inch casserole dish.

7. Pour queso evenly over the top, then sprinkle with shredded cheese.

8. Bake uncovered for 20–25 minutes until bubbly and golden.

9. Remove from oven, let cool for 5–10 minutes.

10. Garnish with sliced jalapeños or cilantro and serve warm.


Notes

Use freshly grated cheese for a smoother melt and better flavor.
