Ingredients
3 cups shredded chicken
2 cans (15 oz each) white beans, drained and rinsed
1 cup corn (frozen or canned)
4 cups chicken broth
1 can (4 oz) diced green chiles
1 small onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
4 oz cream cheese, softened
1/2 cup sour cream
1 jalapeño, diced (optional)
1 cup shredded cheddar cheese (for topping)
2 tablespoons chopped fresh cilantro (for topping)
Salt and pepper to taste
1 tablespoon olive oil
Instructions
1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until soft, about 5 minutes. Stir in garlic and cook another minute.
2. Add cumin, oregano, and chili powder. Stir well and toast the spices for about 30 seconds.
3. Pour in chicken broth, green chiles, and white beans. Bring to a simmer and cook for 10 minutes.
4. Stir in shredded chicken and corn. Simmer another 10–15 minutes.
5. Reduce heat to low. Add cream cheese and sour cream. Stir until smooth and creamy.
