Ingredients
1/4 cup unsalted butter, melted
1/2 cup packed light brown sugar
6–8 pineapple slices
Maraschino cherries
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs, room temperature
1/3 cup sour cream, room temperature
1/4 cup pineapple juice
1 teaspoon vanilla extract
1/4 cup milk, room temperature
Instructions
1. Pour melted butter into a greased 9-inch cake pan and sprinkle brown sugar evenly over it. Arrange pineapple slices and place cherries in centers and gaps.
2. In a bowl, whisk flour, baking powder, baking soda, and salt.
3. In a separate large bowl, cream the butter and sugar until light and fluffy.
4. Beat in the eggs one at a time, then add sour cream, pineapple juice, and vanilla.
5. Add dry ingredients in two parts, alternating with milk, mixing just until combined.
