Ingredients
16 oz cream cheese, softened
1 cup crushed pineapple, very well drained
1 cup shredded sharp cheddar cheese
2 tablespoons chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup finely chopped pecans
Instructions
1. Allow the cream cheese to soften at room temperature for 30–45 minutes until smooth and easy to mix.
2. Drain the crushed pineapple thoroughly using a fine mesh strainer, pressing out as much liquid as possible to prevent a soft mixture.
3. In a large mixing bowl, combine the softened cream cheese, drained pineapple, shredded cheddar, green onions, garlic powder, onion powder, salt, and black pepper. Mix until fully blended and evenly combined.
4. Cover the mixture and refrigerate for 1 hour to firm up and allow the flavors to develop.
5. Remove the chilled mixture and shape it into a compact ball using clean hands or a spatula.
6. Spread the finely chopped pecans on a flat plate.
7. Roll the cheese ball in the pecans, pressing gently so the nuts adhere evenly on all sides.
8. Cover and refrigerate for an additional 1–2 hours to fully firm before serving.
9. Let sit at room temperature for 10–15 minutes before serving for easier spreading. Serve with crackers, toasted baguette slices, pretzels, or fresh vegetables.
Notes
Drain the pineapple extremely well to ensure the cheese ball holds its shape properly. Excess moisture will make it too soft.
For deeper flavor, lightly toast the pecans before coating the cheese ball. Allow them to cool completely before using.
For best results, prepare the Pineapple Cheese Ball at least one day in advance to enhance flavor and texture.
