  • 12 large eggs (hard-boiled and peeled)
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, smashed
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tablespoon sugar
  • 1½ teaspoons salt
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon yellow mustard seeds
  • A few sprigs of fresh dill
  • 1 bay leaf (optional)

Instructions

  1. Place eggs in a large saucepan and cover with cold water. Bring to a boil, then cover, remove from heat, and let sit for 10–12 minutes.
  2. Transfer eggs to an ice bath to cool completely, then peel.
  3. In a separate saucepan, combine apple cider vinegar, water, sugar, salt, garlic, and spices. Bring to a light simmer and stir until dissolved. Let cool.
  4. In a clean glass jar, layer peeled eggs, onion slices, and dill sprigs.
  5. Pour the cooled brine over eggs until fully submerged.
  6. Seal the jar with a lid and refrigerate for at least 3 days before serving.
