1 pound ribeye steak or sirloin, thinly sliced

1 tablespoon olive oil

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

1 small yellow onion, sliced

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

4 cups frozen French fries or equivalent homemade

1 tablespoon vegetable oil (if baking or air frying)

½ teaspoon seasoned salt or Cajun seasoning (optional)

1½ cups shredded provolone cheese

½ cup shredded cheddar cheese (optional)

Pickled jalapeños (optional)

Chopped fresh parsley or green onions (optional)

Drizzle of ranch or chipotle mayo (optional)


Instructions

1. Place steak in freezer for 15–20 minutes for easier slicing, then slice thinly against the grain.

2. Prepare bell peppers and onion by slicing thinly and setting aside.

3. Cook fries via air fryer, oven, or fryer until golden and crispy. Season lightly if desired.

4. Heat olive oil in a cast iron skillet over medium-high heat.

5. Sauté sliced peppers and onions for 5–7 minutes until softened and slightly browned. Remove and set aside.

6. In the same skillet, cook sliced steak over high heat. Season with garlic powder, smoked paprika, salt, and pepper. Cook for 2–3 minutes until browned.

7. Return peppers and onions to the skillet and toss with the steak to combine.

8. Preheat oven to 375°F (190°C). Spread fries in a baking dish or oven-safe skillet.

9. Layer steak and veggie mixture evenly over fries.

10. Top generously with provolone and cheddar cheese.

11. Bake for 8–10 minutes or broil for 2–3 minutes until cheese is melted and bubbly.
