- 1 pound (500g) gnocchi
- 2 cups fresh basil leaves, packed
- 2 garlic cloves
- 1/4 cup pine nuts (toasted)
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt and black pepper to taste
- 1 tablespoon lemon juice (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add gnocchi and cook until they float to the surface (2–3 minutes).
- Remove gnocchi with a slotted spoon and set aside.
- In a food processor or blender, combine basil, garlic, pine nuts, and Parmesan.
- Pulse a few times, then slowly blend in olive oil until smooth.
- Season pesto with salt, pepper, and lemon juice (if using).
- In a skillet over low heat, add cooked gnocchi and pesto.
- Gently toss until gnocchi are evenly coated and warmed through.
- Serve immediately with extra Parmesan and basil garnish.
