  • 1.5 to 2 pounds of beef sirloin or flank steak, thinly sliced
  • 3 bell peppers (mix of red, green, yellow), chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water (for cornstarch slurry)
  • 1 tablespoon olive oil or sesame oil (optional for searing)

Instructions

  1. Slice the beef thinly against the grain and chop all vegetables.
  2. (Optional) Sear beef strips in a skillet with oil for 2-3 minutes until browned.
  3. Place beef, bell peppers, onion, and garlic in the crock pot.
  4. In a small bowl, whisk together soy sauce, beef broth, brown sugar, black pepper, and red pepper flakes.
  5. Pour the sauce over the contents in the crock pot.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  7. In the last 30 minutes of cooking, mix cornstarch with cold water and stir into the crock pot to thicken the sauce.
  8. Taste and adjust seasoning as needed before serving.
