  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1½ tsp freshly cracked black pepper (adjust to taste)
  • Salt, to taste
  • 3 slices cooked bacon, chopped (optional)
  • 2 tbsp fresh parsley, chopped
  • Reserved pasta water (about ½ cup)

Instructions

  1. Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente. Reserve ½ cup of pasta water, then drain pasta.

  2. Season chicken breasts with salt and freshly cracked black pepper.

  3. In a large skillet, heat olive oil over medium-high heat. Sear chicken for 5–6 minutes per side, until golden and cooked through. Remove, rest for a few minutes, then slice.

  4. In the same skillet, reduce heat to medium. Add garlic and sauté for 1 minute until fragrant.

  5. Add heavy cream, bring to a gentle simmer. Stir in Parmesan cheese and black pepper, whisking until cheese melts and sauce thickens slightly.

  6. Add cooked pasta to the skillet and toss to coat. Stir in sliced chicken and cooked bacon (if using). Adjust sauce consistency with reserved pasta water as needed.

  7. Taste and adjust seasoning with additional salt or pepper.

  8. Garnish with fresh parsley and extra Parmesan. Serve immediately.
