1 cup creamy peanut butter

0.5 cup unsalted butter, softened

1 teaspoon vanilla extract

3.5 cups powdered sugar

2 cups semi-sweet chocolate chips

1 tablespoon coconut oil (optional)


Instructions

1. In a large bowl, beat the peanut butter, butter, and vanilla extract until smooth and fluffy.

2. Gradually mix in powdered sugar, 1 cup at a time, until dough is thick and moldable.

3. Roll dough into 1-inch balls and place on a parchment-lined baking sheet.

4. Chill the balls in the refrigerator or freezer for 30 minutes until firm.

5. In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second intervals until smooth.

6. Using a toothpick, dip each ball into the melted chocolate, leaving a small circle exposed at the top.

7. Place the dipped buckeyes back on the tray and chill until the chocolate hardens.

8. Remove the toothpicks and smooth over holes if desired.

9. Store in the fridge or freezer as needed.


Notes

Make sure to chill the peanut butter balls before dipping to help them keep their shape.

If using natural peanut butter, stir it well and add extra sugar to firm up the dough.

For a glossy chocolate finish, add a bit of coconut oil or shortening when melting the chocolate.
