Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 1/2 teaspoons vanilla extract
8 oz whipped topping (or whipped cream)
3 cups sliced peaches (fresh, canned, or thawed frozen)
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch
1/2 cup graham cracker crumbs (for topping)
2 tablespoons brown sugar (for topping)
2 tablespoons melted butter (for topping)
Instructions
1. In a bowl, combine 2 cups graham cracker crumbs and 1/2 cup melted butter until well-mixed. Press the mixture into the bottom of a springform pan. Chill in the refrigerator while preparing the filling.
2. Beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined. Fold in whipped topping until fluffy and smooth.
3. Spread the cheesecake mixture evenly over the chilled crust. Smooth the top and refrigerate for 2–3 hours to set.
4. In a saucepan over medium heat, combine sliced peaches, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until the peaches soften and release their juices. Stir in cornstarch and cook until thickened. Let cool completely.
5. In a small bowl, mix 1/2 cup graham cracker crumbs, 2 tablespoons brown sugar, and 2 tablespoons melted butter to form a crumbly topping.
6. Once the cheesecake has set, spoon the cooled peach mixture over the top. Sprinkle with the crumb topping.
7. Chill the entire dessert for at least 1 more hour before slicing and serving.
Notes
Make sure cream cheese is at room temperature to avoid lumps in the filling.
Let the peach topping cool before adding it to the cheesecake to prevent melting.
For cleaner slices, use a hot knife and wipe between each cut.
