Ingredients
2 cups sharp cheddar cheese, freshly grated
4 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 cup diced pimentos, drained
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon cayenne pepper or a few dashes hot sauce (optional)
Instructions
1. Grate the sharp cheddar cheese and set aside.
2. Let the cream cheese soften at room temperature for 30 minutes.
3. In a large mixing bowl, blend cream cheese and mayonnaise until smooth.
4. Fold in the shredded cheddar and diced pimentos.
5. Add salt, pepper, and any optional seasonings.
6. Mix gently until everything is combined.
7. Taste and adjust seasoning if needed.
8. Chill for at least 30 minutes before serving to allow flavors to meld.
9. Serve at room temperature for best flavor and texture.
Notes
For the best texture and flavor, use freshly grated cheddar rather than pre-shredded.
Chilling the spread before serving enhances the taste and texture.
Adjust the spice level by adding more or less cayenne or hot sauce.
