- 2 large boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1/2 cup Panko breadcrumbs
- 2 large eggs
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil (for frying)
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Slice or pound chicken breasts to even thickness and season with salt and pepper.
- Set up a breading station with beaten eggs in one bowl, and a mixture of Parmesan and breadcrumbs in another.
- Dip chicken in egg, then coat thoroughly in the Parmesan-breadcrumb mix.
- Heat olive oil in a skillet over medium heat. Cook chicken 4–5 minutes per side, until golden and fully cooked.
- Remove chicken and set aside. In the same pan, melt butter and sauté minced garlic for 1 minute.
- Pour in heavy cream and simmer 4–5 minutes until slightly thickened. Season with salt and pepper.
- Return chicken to pan to coat with sauce or serve chicken with sauce spooned over top.
- Garnish with chopped parsley if desired and serve immediately.
