  • 4 cod fillets (about 6 oz each), skinless and boneless
  • 2 tbsp olive oil
  • 3 garlic cloves, thinly sliced
  • 2 cups cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped (plus extra for garnish)
  • Salt and freshly cracked black pepper, to taste
  • Juice of 1/2 lemon
  • Optional: pinch of red pepper flakes
  • Optional: 1/4 cup dry white wine

Instructions

  1. Pat cod fillets dry and season both sides with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add cod fillets and sear for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  4. Add remaining olive oil to the pan. Sauté garlic for 30 seconds until fragrant.
  5. Add cherry tomatoes and a pinch of salt. Cook for 5–6 minutes, until tomatoes soften and begin to burst.
  6. (Optional) Add white wine and let it simmer for 1 minute.
  7. Stir in chopped basil, lemon juice, and red pepper flakes (if using).
  8. Return cod to the pan and spoon sauce over the fillets. Simmer for 1–2 minutes to heat through.
  9. Serve hot, garnished with extra basil.
