- 4 cod fillets (about 6 oz each), skinless and boneless
- 2 tbsp olive oil
- 3 garlic cloves, thinly sliced
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil leaves, chopped (plus extra for garnish)
- Salt and freshly cracked black pepper, to taste
- Juice of 1/2 lemon
- Optional: pinch of red pepper flakes
- Optional: 1/4 cup dry white wine
Instructions
- Pat cod fillets dry and season both sides with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add cod fillets and sear for 3–4 minutes per side until golden and cooked through. Remove and set aside.
- Add remaining olive oil to the pan. Sauté garlic for 30 seconds until fragrant.
- Add cherry tomatoes and a pinch of salt. Cook for 5–6 minutes, until tomatoes soften and begin to burst.
- (Optional) Add white wine and let it simmer for 1 minute.
- Stir in chopped basil, lemon juice, and red pepper flakes (if using).
- Return cod to the pan and spoon sauce over the fillets. Simmer for 1–2 minutes to heat through.
- Serve hot, garnished with extra basil.
