  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 2 tablespoons corn syrup (or maple syrup)
  • 1 loaf brioche bread, thick-sliced
  • 5 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a saucepan, melt butter over medium heat. Stir in brown sugar and corn syrup. Simmer for 2-3 minutes until slightly thickened. Pour into a greased 9×13-inch baking dish.
  2. Arrange thick slices of brioche in a single layer over the caramel.
  3. In a bowl, whisk eggs, milk, cream, vanilla, and salt. Pour custard evenly over bread. Press lightly to soak.
  4. Cover and refrigerate overnight.
  5. The next morning, preheat oven to 350°F (175°C). Let dish sit at room temp while oven preheats.
  6. Bake uncovered for 35-40 minutes, until golden brown and bubbling at the edges.
