1.5 pounds boneless skinless chicken thighs

1.5 pounds red potatoes

3 tablespoons olive oil

1.5 tablespoons Cajun seasoning

4 cloves garlic, minced

1 teaspoon salt

0.5 teaspoon black pepper

0.25 cup grated Parmesan cheese

2 tablespoons fresh chopped parsley


Instructions

1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment or lightly grease it.

2. Wash and chop the red potatoes into 1-inch chunks and place them in a large bowl.

3. Toss the potatoes with half of the olive oil, half of the Cajun seasoning, half the salt and pepper, and all the minced garlic.

4. In another bowl, toss the chicken thighs (cut or whole) with the remaining olive oil, Cajun seasoning, salt, and pepper.

5. Spread the potatoes out evenly on the prepared baking sheet. Nestle the chicken pieces between the potatoes in a single layer.

6. Roast for 35 to 40 minutes, tossing everything halfway through for even cooking.

7. Check that the chicken reaches an internal temperature of 165°F and the potatoes are golden and crispy.

8. Remove from the oven and immediately sprinkle with Parmesan cheese while hot.

9. Finish with fresh chopped parsley just before serving.

10. Let rest for 5 minutes, then serve hot.

Don’t overcrowd your pan—use two trays if needed for maximum crispiness.
