- 1 pound ground Italian sausage or ground beef
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 2 1/2 cups marinara or pizza sauce
- 3 cups low-sodium chicken broth
- 12 oz rotini pasta (or any short pasta)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup mini pepperoni slices
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
- Add diced onions and sauté for 2–3 minutes until soft. Stir in garlic and cook for another 30 seconds.
- Add ground sausage or beef and cook until browned. Drain excess fat if needed.
- Stir in marinara or pizza sauce, Italian seasoning, and red pepper flakes.
- Add pasta and chicken broth. Stir well and ensure pasta is submerged.
- Bring to a simmer, cover, and cook on medium-low for 10–12 minutes, stirring occasionally.
- Once pasta is tender, stir in half the mozzarella and all the pepperoni.
- Sprinkle remaining mozzarella and Parmesan on top. Cover and let sit 2–3 minutes off heat until melted.
