  • 3 cups chicken broth (or seafood stock)
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Juice of ½ lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté shallots for 2–3 minutes until softened.
  2. Stir in minced garlic and red pepper flakes; cook until fragrant.
  3. Add orzo and toast for 1–2 minutes until slightly golden.
  4. Pour in the broth and sun-dried tomatoes; bring to a simmer.
  5. Cook orzo for about 8–10 minutes, stirring occasionally.
  6. Nestle the shrimp into the simmering orzo during the last 5 minutes of cooking.
  7. Stir in heavy cream and Parmesan; reduce heat and simmer gently for 2–3 minutes.
  8. Finish with fresh parsley, a squeeze of lemon juice, and season with salt and pepper.
