- 1 lb (450g) potato gnocchi
- 1 lb (450g) boneless, skinless chicken breast or thighs, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 large lemon, zested and juiced
- 1/3 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: Lemon slices for garnish
Instructions
- Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
- Add diced chicken, season with salt and pepper, and cook for 5–6 minutes until browned. Remove and set aside.
- In the same pan, sauté garlic for 30 seconds until fragrant.
- Deglaze the pan with chicken broth, scraping up the browned bits.
- Add gnocchi and stir to coat. Cover and simmer for 5–7 minutes until tender.
- Reduce heat, then stir in heavy cream, lemon juice, lemon zest, and Parmesan.
- Return the chicken to the pan and simmer for 2–3 minutes until sauce thickens.
- Adjust seasoning, garnish with parsley and lemon slices, and serve warm.
