  • 2 large chicken breasts (boneless, skinless)
  • 1 1/2 cups long-grain white rice
  • 2 large yellow onions, thinly sliced
  • 3 cups beef broth (or chicken broth for a lighter flavor)
  • 2 tbsp butter
  • 2 tbsp olive oil (divided)
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup gruyere or mozzarella cheese (optional, for a creamy finish)

Instructions

  1. Heat butter and 1 tbsp olive oil in a large pot over medium heat. Add sliced onions and cook, stirring occasionally, for 20–25 minutes until golden and caramelized.
  2. Season chicken breasts with salt and pepper. Increase heat to medium-high, add the remaining olive oil, and sear chicken for 3–4 minutes per side until golden brown. Remove chicken and set aside.
  3. Add garlic and thyme to the pot with the caramelized onions. Stir and cook for 1 minute until fragrant.
  4. Add rice and stir to coat with the onion mixture. Pour in beef broth and stir well to combine.
  5. Return the seared chicken to the pot, nestling it into the rice. Cover with a tight-fitting lid and reduce heat to low. Simmer for 20–25 minutes, or until rice is tender and chicken is fully cooked.
  6. Remove from heat and let the dish rest, covered, for 5 minutes. Garnish with parsley and cheese if desired. Serve hot and enjoy!
