For the Chicken:
- 2 large boneless, skinless chicken breasts, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil
For the Pasta and Sauce:
- 3–4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, sliced
- 2 cups chicken broth
- 1 1/2 cups heavy cream
- 8 oz penne pasta
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 1 cup grated Parmesan cheese
- 2 cups baby spinach
Optional Garnishes:
- Extra Parmesan cheese
- Fresh basil or parsley
- Cracked black pepper
Instructions
- Season chicken with salt, pepper, and paprika.
- Heat olive oil in a large skillet and sear chicken until golden and cooked through. Set aside.
- In the same skillet, sauté garlic for 30 seconds, then add sun-dried tomatoes and cook for 1 minute.
- Pour in chicken broth and cream. Stir in Italian seasoning and red pepper flakes. Bring to a boil.
- Add penne pasta, reduce heat, cover, and simmer for 10–12 minutes until pasta is tender.
- Stir in Parmesan cheese until melted. Add spinach and cook until wilted.
- Return chicken to skillet and stir to combine.
- Serve hot, garnished with extra cheese and herbs if desired.
