For the Chicken:

  • 2 large boneless, skinless chicken breasts, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil

For the Pasta and Sauce:

  • 34 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 8 oz penne pasta
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach

Optional Garnishes:

  • Extra Parmesan cheese
  • Fresh basil or parsley
  • Cracked black pepper

Instructions

  1. Season chicken with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet and sear chicken until golden and cooked through. Set aside.
  3. In the same skillet, sauté garlic for 30 seconds, then add sun-dried tomatoes and cook for 1 minute.
  4. Pour in chicken broth and cream. Stir in Italian seasoning and red pepper flakes. Bring to a boil.
  5. Add penne pasta, reduce heat, cover, and simmer for 10–12 minutes until pasta is tender.
  6. Stir in Parmesan cheese until melted. Add spinach and cook until wilted.
  7. Return chicken to skillet and stir to combine.
  8. Serve hot, garnished with extra cheese and herbs if desired.
