1 lb sirloin steak, trimmed and cubed

2 tablespoons olive oil

1 tablespoon unsalted butter

Salt and freshly ground black pepper, to taste

1 teaspoon garlic powder

½ teaspoon smoked paprika

8 oz rotini pasta

2 tablespoons unsalted butter

4 garlic cloves, minced

½ cup heavy cream

¾ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper, to taste

Pinch of red pepper flakes (optional)

1 teaspoon chopped fresh parsley (for garnish)


Instructions

1. Bring a large pot of salted water to a boil. Add the rotini and cook until al dente, about 8–9 minutes. Drain and set aside, reserving ½ cup of pasta water.

2. While the pasta cooks, pat the steak dry. Season with salt, pepper, garlic powder, and smoked paprika.

3. Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer and sear for 2–3 minutes per side. Add 1 tablespoon of butter and spoon over steak just before removing from pan. Set steak aside and cover.

4. In the same skillet, reduce heat to medium and melt 2 tablespoons of butter. Add minced garlic and sauté for 30 seconds until fragrant.

5. Pour in heavy cream and let it bubble gently. Add mozzarella and Parmesan, stirring until the sauce is smooth and melty.

6. Season the sauce with salt, pepper, and red pepper flakes if using. Add pasta water a bit at a time if the sauce is too thick.

7. Toss the drained pasta into the sauce, stirring to coat evenly.

8. Top pasta with steak bites and garnish with fresh parsley. Serve immediately.


Notes

Make sure your steak is fully dry before searing to achieve a proper crust.

Grate your cheese fresh—pre-shredded cheese doesn’t melt as smoothly.
