Ingredients

Scale

1.5 lbs boneless, skinless chicken breasts

1 cup long grain white rice

2 cups chicken broth

1/2 cup BBQ sauce

3 tablespoons honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste

2 tablespoons chopped parsley or green onions (optional, for garnish)

Instructions

1. Preheat your oven to 375°F (190°C).

2. Cut chicken into bite-sized pieces and season with salt, pepper, garlic powder, and onion powder.

3. In a large oven-safe skillet, heat olive oil over medium-high heat.

4. Sear the chicken for 4–5 minutes until lightly browned but not fully cooked.

5. Mix BBQ sauce and honey in a bowl. Pour half over the chicken and stir to coat. Cook 1–2 minutes.

6. Stir in uncooked rice, then pour in chicken broth. Bring to a simmer.

7. Cover the skillet with foil or a lid and bake for 30–35 minutes.

8. Remove from oven and drizzle with remaining sauce.

9. Let rest uncovered for 5 minutes.

10. Garnish with parsley or green onions and serve.

Notes

Let the dish rest after baking for fluffier rice and better flavor absorption.

Use long grain rice for the best texture; avoid instant or quick-cooking rice.

Add a splash of broth when reheating leftovers to keep the rice moist.
