  • 3 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 8 oz green beans, trimmed
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh chopped parsley (or 1 tsp dried)
  • 1 teaspoon dried oregano or thyme
  • Salt and black pepper to taste
  • Optional: juice of 1/2 lemon for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt, pepper, minced garlic, and herbs. Let sit for 10–15 minutes.
  3. In a large oven-safe skillet, heat 1 tablespoon olive oil over medium-high heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.
  4. Add remaining olive oil to the skillet. Toss in halved potatoes with a pinch of salt and garlic. Cook for 3–4 minutes.
  5. Nestle chicken breasts back into the skillet among the potatoes.
  6. Transfer skillet to the oven and roast for 20 minutes.
  7. Add green beans to the pan, drizzle with a bit of oil, and return to oven for another 10–12 minutes.
  8. Remove from oven, drizzle with lemon juice (if using), and garnish with fresh parsley.
