For the Chicken:

  • 6 boneless, skinless chicken thighs
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 2 tbsp olive oil

For the Sauce & Noodles:

  • 3 tbsp unsalted butter (divided)
  • 34 garlic cloves, minced
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard
  • 8 oz egg noodles
  • Salt and pepper to taste

For Garnish:

  • 2 tbsp chopped fresh parsley
  • Grated Parmesan (optional)

Instructions

  1. Pat the chicken dry and season with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  4. In the same skillet, melt 1 tbsp butter and sauté garlic for 30 seconds.
  5. Add chicken broth, scraping up brown bits, then stir in cream and Dijon mustard. Simmer 2–3 minutes.
  6. Add noodles and stir to coat. Return chicken to the pan, nestling it on top.
  7. Cover and simmer 12–15 minutes over medium-low heat until noodles are tender.
  8. Stir in remaining 2 tbsp butter. Garnish with parsley and optional Parmesan.
  9. Let sit 5 minutes before serving.
