4 cups low-sodium chicken broth

2 cups cooked shredded chicken

2 cups half-and-half

Instructions

1. Heat olive oil or butter in a large pot over medium heat. Add diced onion, celery, and carrots. Cook for 5–7 minutes until softened.

2. Stir in garlic, thyme, nutmeg, salt, and pepper. Cook for another minute.

3. Sprinkle in flour, stir well, and cook for 1–2 minutes to form a roux.

4. Gradually add chicken broth while whisking. Bring to a boil and let it slightly thicken.

5. Add shredded chicken and gnocchi. Simmer for 4–5 minutes until gnocchi float.

6. Reduce heat and stir in half-and-half and spinach. Let the spinach wilt.
