1 lb large shrimp, peeled and deveined

1 1/2 tbsp Old Bay seasoning

1 tbsp olive oil

1 lime, juiced

1 1/2 cups cooked white or brown rice

1 cup canned black beans, drained and rinsed

1/2 cup red onion, finely diced

1/2 cup fresh cilantro, chopped

1/4 tsp salt

1/4 tsp cumin

1/2 cup shredded cheese

1/2 cup sour cream or chipotle mayo

4 large flour tortillas

Diced avocado or guacamole

Salsa or hot sauce

Corn kernels

Shredded lettuce or spinach


Instructions

1. In a bowl, combine shrimp with olive oil, Old Bay, and lime juice. Let marinate for 10–15 minutes.

2. Heat a skillet over medium-high. Cook shrimp for 2–3 minutes per side until pink and slightly seared.

3. In another bowl, mix rice, black beans, red onion, cilantro, salt, and cumin. Warm the mixture slightly.

4. Warm tortillas on a skillet or flame until soft and pliable.

5. Lay tortilla flat. Add rice-bean mix, shrimp, cheese, and desired extras. Drizzle with sauce.

6. Fold and roll burrito tightly. Grill seam-side down for 1–2 minutes until golden.

7. Slice in half and serve with lime, salsa, or guacamole.


Notes

Pat shrimp dry before marinating to get the best sear.

Don’t overfill the burrito to prevent tearing or mess.
