Ingredients
1 lb ground beef (80/20 blend)
2 medium yellow onions, very thinly sliced
4 slices American cheese
4 burger buns
1 tbsp unsalted butter
Kosher salt, to taste
Black pepper, to taste
Cooking oil or spray
Dill pickle chips
Mustard or mayo
Lettuce or tomato
Instructions
1. Slice onions very thin using a mandoline or sharp knife. Salt lightly and let sit 10 minutes.
2. Divide beef into four 4-oz balls, season with salt and pepper.
3. Preheat cast iron skillet over high heat with a touch of oil.
4. Add a small pile of onions to skillet, place beef ball on top, smash flat.
