- 1 lb ground beef (80/20 for best results)
- 1 large yellow onion, thinly sliced
- 4 burger buns (brioche or classic hamburger buns)
- 4 slices American cheese (or cheddar)
- 1 tbsp butter (for toasting buns)
- Salt and black pepper, to taste
- 1 tbsp vegetable oil (for cooking)
Instructions
- Prepare the onions – Thinly slice the onion using a mandoline or sharp knife. The thinner, the better for caramelization.
- Form the patties – Divide the ground beef into 4 equal portions and form them into loose balls. Do not overpack.
- Heat the skillet – Heat a cast-iron skillet or griddle over medium-high heat and add a little vegetable oil.
- Cook the burgers – Place a portion of sliced onions in the skillet, then immediately place a beef ball on top. Use a spatula to smash the beef firmly into the onions, flattening it into a thin patty.
- Season and flip – Sprinkle salt and pepper on top. Let the burger cook for 2-3 minutes, then carefully flip, pressing down again. The onions should be golden and crispy.
- Add cheese – Place a slice of cheese on each patty and let it melt while cooking for another 1-2 minutes.
- Toast the buns – In a separate pan, toast the buns with butter until golden brown.
- Assemble and serve – Place each patty on a bun and serve immediately. Add condiments of choice.
