2 cups graham cracker crumbs

1 cup heavy cream
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups sour cherries, drained and patted dry
1 cup whipped cream (for topping)
2 tablespoons chocolate shavings (for garnish)
Instructions
1. Combine graham cracker crumbs and melted butter in a bowl until fully moistened. Press the mixture into the bottom and sides of a 9-inch pie dish and chill in the fridge.
2. Melt chocolate over a double boiler or in the microwave using short bursts. Stir until smooth and let cool slightly.
3. In a separate bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until creamy.
4. Whip the heavy cream in a chilled bowl until stiff peaks form.
5. Gently fold the whipped cream into the cooled melted chocolate, then fold that mixture into the cream cheese blend.
6. Fold in half of the sour cherries, being careful not to break them.
7. Pour the filling into the chilled crust. Smooth the top and arrange remaining cherries on top.
8. Cover and refrigerate for at least 6 hours or overnight until set.
9. Before serving, top with whipped cream and chocolate shavings.
