For the Cake
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 and 1/2 cups (190g) all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (120ml) sour cream or plain yogurt
- 1/4 cup (60ml) milk
For the Apple Filling
- 2 large apples, peeled, cored, and thinly sliced (preferably Granny Smith or Honeycrisp)
- 1/4 cup (50g) brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
For the Crumble Topping
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (50g) brown sugar
- 1/4 cup (50g) granulated sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup (60g) unsalted butter, melted
Optional Glaze
- 1/2 cup (60g) powdered sugar
- 1–2 tablespoons milk or heavy cream
- 1/4 teaspoon vanilla extract
Instructions
- Prepare the Crumble Topping
- In a medium bowl, whisk together the flour, brown sugar, granulated sugar, cinnamon, and salt.
- Add the melted butter and mix until the mixture resembles coarse crumbs.
- Chill in the refrigerator while preparing the cake.
- Prepare the Apple Filling
- Peel, core, and thinly slice the apples.
- Toss the slices with brown sugar, cinnamon, and nutmeg.
- Set aside.
- Prepare the Cake Batter
- Preheat oven to 350°F (175°C). Grease and line an 8×8 or 9×9 inch baking pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Mix in vanilla extract.
- In another bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, alternating with sour cream and milk. Mix until just combined.
- Assemble the Cake
- Spread half of the batter into the prepared pan.
- Layer half of the apple mixture over the batter.
- Add the remaining batter over the apples.
- Top with remaining apples and sprinkle with the crumble topping.
- Bake
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let cool for 20 minutes before transferring to a cooling rack.
- Optional Glaze
- Mix powdered sugar, milk, and vanilla until smooth.
- Drizzle over cooled cake before serving.
