For the Cake

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups (190g) all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) sour cream or plain yogurt
  • 1/4 cup (60ml) milk

For the Apple Filling

  • 2 large apples, peeled, cored, and thinly sliced (preferably Granny Smith or Honeycrisp)
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)

For the Crumble Topping

  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (60g) unsalted butter, melted

Optional Glaze

  • 1/2 cup (60g) powdered sugar
  • 12 tablespoons milk or heavy cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the Crumble Topping
    • In a medium bowl, whisk together the flour, brown sugar, granulated sugar, cinnamon, and salt.
    • Add the melted butter and mix until the mixture resembles coarse crumbs.
    • Chill in the refrigerator while preparing the cake.
  2. Prepare the Apple Filling
    • Peel, core, and thinly slice the apples.
    • Toss the slices with brown sugar, cinnamon, and nutmeg.
    • Set aside.
  3. Prepare the Cake Batter
    • Preheat oven to 350°F (175°C). Grease and line an 8×8 or 9×9 inch baking pan.
    • In a large bowl, cream together butter and sugar until light and fluffy.
    • Add eggs one at a time, mixing well after each.
    • Mix in vanilla extract.
    • In another bowl, whisk flour, baking powder, baking soda, and salt.
    • Gradually add dry ingredients to wet ingredients, alternating with sour cream and milk. Mix until just combined.
  4. Assemble the Cake
    • Spread half of the batter into the prepared pan.
    • Layer half of the apple mixture over the batter.
    • Add the remaining batter over the apples.
    • Top with remaining apples and sprinkle with the crumble topping.
  5. Bake
    • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
    • Let cool for 20 minutes before transferring to a cooling rack.
  6. Optional Glaze
    • Mix powdered sugar, milk, and vanilla until smooth.
    • Drizzle over cooled cake before serving.
