Missouri Cookies are chewy, rich, and loaded with peanut butter, chocolate chips, and chopped peanuts. Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 and 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup chopped peanuts
Instructions
1. In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until smooth and fluffy.
2. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients until just combined.
4. Fold in chocolate chips and chopped peanuts until evenly distributed.
5. Chill dough in the refrigerator for 30–60 minutes for thicker cookies.
6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Scoop dough into 1.5-tablespoon balls and place on baking sheet 2 inches apart.
8. Bake for 10–12 minutes, until edges are golden and centers are just set.
9. Let cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
Notes
For best results, use no-stir creamy peanut butter like Jif or Skippy.
Chilling the dough helps produce thicker, chewier cookies with deeper flavor.
Store cookies with a slice of bread in the container to keep them soft longer.
