Description

Mexican White Trash Casserole is a rich and satisfying layered bake filled with seasoned ground beef, creamy sauce, melty cheese, and crunchy tortilla chips. It’s the kind of over-the-top comfort food that brings Tex-Mex flavors to the family table with minimal effort and maximum taste. Ingredients

1 pound ground beef

1 packet taco seasoning

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 can (10 oz) Rotel tomatoes, drained

2 cups shredded cheddar cheese

3 cups tortilla chips, lightly crushed

0.5 cup sliced black olives (optional)

0.5 small onion, diced

1 tablespoon olive oil

Optional Toppings:

diced tomatoes

chopped cilantro

green onions

extra shredded cheese

jalapeño slices


Instructions

1. Preheat your oven to 350°F (175°C).

2. In a skillet, heat olive oil and sauté diced onion for 2 minutes.

3. Add ground beef and cook until browned, then drain fat.

4. Stir in taco seasoning and ¼ cup of water. Simmer 2–3 minutes.

5. In a bowl, mix together cream of mushroom soup, sour cream, and drained Rotel.

6. In a 9×13-inch baking dish, layer as follows:

7. – First, a layer of crushed tortilla chips.

8. – Then half of the cooked beef.

9. – Spoon on half of the creamy mixture.

10. – Sprinkle one-third of the cheese.

11. Repeat the layers and finish with the remaining cheese on top.

12. Bake uncovered for 25–30 minutes, until bubbly and golden on top.

13. Let rest for 10 minutes after baking.

14. Top with olives, tomatoes, cilantro, and any other garnishes. Serve warm.


Notes

Let cream ingredients come to room temperature before mixing for smoother layers.

Don’t over-crush the chips—keep them slightly chunky for texture.

Broil the top for 2 minutes at the end for a golden, crispy finish.
