Ingredients
- 4 white fish fillets (cod, halibut, or similar)
- 2 cups cherry tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, torn
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Pat fish fillets dry and set aside.
- In the baking dish, combine cherry tomatoes, 2 tablespoons olive oil, garlic, salt, pepper, red pepper flakes (if using), and oregano. Toss to coat and spread evenly.
- Nestle fish fillets into the tomato mixture. Drizzle with remaining olive oil and squeeze lemon juice over the top.
