Ingredients
1 block feta cheese (about 7 oz)
½ cup green olives (such as Castelvetrano), pitted
⅓ cup sun-dried tomatoes in oil, sliced
3 tablespoons extra virgin olive oil
1 teaspoon dried oregano
¼ teaspoon red pepper flakes (optional)
Freshly ground black pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Instructions
1. Preheat the oven to 375°F (190°C).
2. Place the block of feta in the center of a small baking dish.
3. Drizzle the olive oil over and around the feta.
4. Scatter the olives and sun-dried tomatoes on and around the feta.
5. Sprinkle with dried oregano, red pepper flakes (if using), and black pepper.
6. Bake for 20–25 minutes, or until the feta is soft and lightly golden.
7. Optional: Broil for the last 2–3 minutes for a more golden top.
8. Remove from oven and let sit for 5 minutes.
9. Top with fresh parsley before serving.
10. Serve warm with crusty bread, pita, or veggies.
Notes
Use block feta packed in brine for best texture and flavor—crumbled feta won't work here.
Let the dish cool for 5 minutes after baking to allow flavors to settle and avoid burning your mouth.
