  • 2 cups mashed potatoes (leftover or freshly made)
  • 2 large eggs
  • 1 cup shredded cheese (cheddar, Gruyère, mozzarella, or a blend)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons milk
  • 2 tablespoons chopped chives or green onions (optional)
  • Salt and pepper, to taste
  • Butter or cooking spray (for greasing muffin tin)

Instructions

  1. Preheat oven to 400°F (200°C). Generously grease a standard or mini muffin tin.

  2. In a large mixing bowl, combine mashed potatoes, eggs, shredded cheese, Parmesan, milk, chives (if using), salt, and pepper.

  3. Gently fold ingredients together—do not overmix.

  4. Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full.

  5. Sprinkle extra Parmesan or shredded cheese on top of each puff.

  6. Bake for 20–25 minutes (or 15–18 minutes for mini muffins), until golden and crispy.

  7. Let cool in the pan for 5 minutes, then carefully remove and serve warm.
