- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh basil or parsley for garnish
Instructions
- Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and Italian seasoning. Sear for 4-5 minutes per side until golden brown. Remove from skillet and set aside.
- Make the Sauce – In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute until fragrant. Pour in the chicken broth, scraping up browned bits from the pan.
- Add the Cream and Cheese – Reduce heat and stir in the heavy cream and parmesan cheese. Mix well until smooth. Add red pepper flakes if using.
- Simmer the Chicken – Return the seared chicken breasts to the skillet. Simmer on low for 10-12 minutes until the chicken is cooked through and the sauce thickens.
- Garnish and Serve – Sprinkle with fresh basil or parsley. Serve hot over pasta, mashed potatoes, or rice.
