Ingredients

Scale

2 tablespoons olive oil

1 small yellow onion, diced

3 cloves garlic, minced

1/2 teaspoon red pepper flakes

1/2 cup sun-dried tomatoes, chopped

1 teaspoon dried Italian herbs

4 cups chicken broth

1 cup heavy cream

3 cups cooked shredded chicken

2 cups fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Instructions

1. Heat olive oil in a Dutch oven over medium heat. Add onion and sauté for 3–4 minutes until soft. Stir in garlic and red pepper flakes; cook for 1 more minute.

2. Add chopped sun-dried tomatoes and Italian herbs; sauté for another 2 minutes to infuse flavor.

3. Pour in chicken broth and bring to a gentle boil. Simmer for 10 minutes.

4. Stir in shredded chicken; simmer for 5 more minutes to blend flavors.

5. Reduce heat to low, then stir in heavy cream and Parmesan cheese. Mix until cheese melts smoothly.

6. Add spinach and cook 2–3 minutes until wilted. Season with salt and pepper to taste.

7. Serve hot, optionally garnished with more Parmesan or crushed red pepper.

Notes

Let the soup rest before serving for deeper flavor.

You can swap spinach with kale or arugula for variation.

Use rotisserie chicken for extra flavor and convenience.
