- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the Pasta: Boil pasta in salted water until al dente. Drain and set aside, reserving ½ cup of pasta water.
- Prepare the Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown and fully cooked (165°F/75°C). Remove and slice into bite-sized pieces.
- Make the Sauce: In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute. Add chicken broth, scraping up any browned bits. Stir in heavy cream, parmesan cheese, and red pepper flakes, letting the sauce simmer for 3-5 minutes until thickened.
- Combine Everything: Return sliced chicken to the pan and stir to coat in sauce. Add the cooked pasta, tossing to combine. If the sauce is too thick, add a splash of pasta water.
