  • 2 boneless, skinless chicken breasts
  • 10 oz pasta (penne, fettuccine, or rigatoni)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Boil pasta in salted water until al dente. Drain and set aside, reserving ½ cup of pasta water.
  2. Prepare the Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown and fully cooked (165°F/75°C). Remove and slice into bite-sized pieces.
  3. Make the Sauce: In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute. Add chicken broth, scraping up any browned bits. Stir in heavy cream, parmesan cheese, and red pepper flakes, letting the sauce simmer for 3-5 minutes until thickened.
  4. Combine Everything: Return sliced chicken to the pan and stir to coat in sauce. Add the cooked pasta, tossing to combine. If the sauce is too thick, add a splash of pasta water.
  5. Garnish and Serve: Sprinkle with fresh parsley and extra parmesan cheese. Serve warm and enjoy!
